Homemade Ice Cream Cookie Sandwiches

Description

Bake your own chocolate chip cookies for the most amazing homemade ice cream cookie sandwiches ever!


Ingredients

Scale
  • 2 1/2 (300 grams) cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (2 sticks) (226 grams) unsalted butter, softened
  • 1 tbsp vanilla bean paste
  • 2 large eggs, room temperature
  • 3/4 cup (150 grams) granulated sugar
  • 3/4 cup (160 grams) Dark Brown Sugar
  • 1/8 cup coffee liquor (optional)
  • 8 oz semi sweet chocolate chips
  • 8 oz milk chocolate chips
  • 8 oz white chocolate chips

Instructions

To bake the chocolate chip cookies:

  1. Preheat oven to 375 degrees F
  2. Line a baking sheet with parchment. Set aside
  3. Whisk flour, baking soda and salt together. Set aside.
  4. Beat sugar and butter until fluffy. Couple of minutes.
  5. Add eggs one at a time and mix until completely incorporated.
  6. Add vanilla.
  7. Add Coffee Liquor.
  8. Turn off mixer. Add the flour mixture to the wet ingredients and blend on low speed until just incorporated.
  9. Add all the chocolate chips and fold in gently.
  10. Use a small ice cream scoop to scoop the cookie dough onto the parchment line baking sheet leaving space for cookies to spread while baking.
  11. Bake 13-16 minutes or until golden brown.
  12. Cool cookies.

To assemble the ice cream sandwiches:

  1. Using the same ice cream scoop, scoop softened ice cream of your choice on to the flat side of one cookie and then gently place a second cookie on top. Gently squeeze together.
  2. Eat right away or place in an air tight container and store in the freezer.

Notes

You can use softened, store bought ice cream to save a step in making this treat. But if you have the time (and inclination) I highly recommend making your own ice cream as well.
